Probably Not So Healthy But Super Delicious Irish Cream Cupcakes

Now, I know I said in my last post that I wanted to get back into my regular posting schedule, which I didn’t really stick to because you know… life got in the way. Nonetheless I’m back with a new post and it’s a recipe one! Yay! I’ve mentioned before how much I love to bake, though sadly I can’t seem to find enough time to fit it in with uni a lot these days. However, a little while a really good friend of mine turned 21, so another good friend of mine and I decided to take her out for a nice dinner and surprise her with some yummy cupcakes because let’s be honest here people, who doesn’t like cupcakes? Am I right?

These incredibly delicious Irish Cream Cupcakes are very chocolatey and even though I’m not a fan of chocoloate cake/muffins/cupcakes etc (I know you might think I must be insane) these are some of the most delicious cupcakes I’ve ever tried, so I thought I’d share this recipe with you guys. They are super easy and really quick to make.

What you need for the dough:

1/2 cup / 125g all-purpose flour

1/4 cup / 60g cocoa powder

1 ½ teaspoons baking soda

¼ teaspoons salt

1/2 cup / 125g butter

1 cup/ 250g sugar

a few drops of vanilla extract

2 eggs

1/2 cup / 125g cream

What you need for the frosting:

1/4 cup /60g butter

1 cup / 250g confectioner’s sugar

2 tablespoons milk

3 tablespoons Irish cream liquor

and a few drops of vanilla extract

1 oz/ 40g chocolate

How to make the dough:

Preheat oven to 180°C. Mix together flour, cocoa powder, baking soda and salt. Mix butter and sugar together in a separate bowl and beat until creamy. Add vanilla extract and eggs while continue to stir. Add half of the flour mixture and cream. Stir for 2 minutes before adding the other half of the flour mixture. And you’re done with the dough. Isn’t it super easy?

Put the cupcakes in the oven for 20 minutes.

How to make the frosting: 

Start of by melting the chocolate Beat butter until creamy. Add melted chocolate, confectioner’s sugar, milk, liquor and vanilla aroma and continue to stir and that’s it already. Wait until the cupcakes have cooled down before applying the frosting.

Now it’s time to decorate. Just be creative and have fun. Enjoy!

Banana Chocolate Chip Bread Recipe


I’ve always had a secret passion for baking. When I was little being allowed to help my grandma bake was like the biggest thing for me. We still have a bunch of pictures of mini me baking or more like me making a mess. I don’t know what it is about baking. Maybe it’s the way you can put a smile on peoples faces just by mixing together a bunch of ingredients to create a delicious baked goodie. Maybe it’s how even though most of my relatives live pretty far away baking Christmas cookies in December would always reunite everyone when I was still a kid. We’d meet up with my grandparents and my great cousins and just spent an entire day baking. Those were the best times.

Nowadays I still love to bake but unfortunately I don’t have much time and whenever I’m at Uni I don’t really have much ingredients either. Therefore I love to use the chance of being able to bake whenever I’m home. One of my favorite things to bake is Banana Chocolate Chip Bread. I love bananas and I love chocolate. Simple as that.

After trying a piece  of banana bread at some garden party I’ve googled a bunch oo recipes ad tried them out. Each time I made banana bread I’ve changed up the recipe and added some of my own ingredients. Now I’ve finally created a recipe, which I’m sticking to because I like my banana bread best this way.

Here’s what you need:

2 cups/ 250g flour
1 teaspoon backing soda
1/2 cup/ 115g butter
3/4 cup/ 110g brown sugar
2 eggs
2 bananas
2 tablespoons of yoghurt
Chocolate chunks

1. Preheat oven to 350 degreez Fahrenheit or 175 degress Celsius
2. Start of by mixingthe flour, baking soda, butter and a pinchof salt.
3. Add sugar, eggs, yoghurt and a tiny bit of milk. You don’t have to add yoghurt but I do because it makes the bread so much lighter and fluffier if you know what I mean.
4. Mash up bananas and add the choclate chip chunks.
5.This step you can skip if you like but I love to add some spices to my banana bread to well spice it uo a little. So what I do is I add a pinch of cinnamon, cloves and nutmeg. I’ve been experimenting with on this part but I decided that these spices go best with th rest of the recipe. I just told you my secret ingredients so shhhh
6. Bake for about 40min.
